Initiatives include an organic food waste program, diverting an average of 9,800 pounds of waste from landfills monthly and aiming for 58 tons annually. They buy back nutrient-rich compost for on-site micro-greeneries, growing basil, arugula, kale, mustard greens, beets, chives, and radish for hotel restaurants. The hotel also has two rooftop honeybee hives, estimated to contain 80,000 to 100,000 honeybees, producing honey for the restaurants.
